Strawberry Cream Cheese Melt-Away Cookies

Cookies
  • 1 ½ cup + 2 Tbsp. all-purpose flour
  • 2/3 cup corn starch
  • ¼ tsp. salt
  • 1 cup unsalted butter, softened
  • 2/3 cup powdered sugar
  • 1 tsp. vanilla extract
Cream Cheese Frosting
  • 4 oz. cream cheese, softened
  • 4 Tbsp unsalted butter, softened
  • 1 tsp. vanilla extract
  • 2 ½ cups powdered sugar
  • 3 Tbsp strawberry jam
Directions
  1. Use a medium size dish to combine your flour, cornstarch, and salt, then set this aside.
  2. Use a large bowl to beat the butter, powdered sugar, and vanilla at a medium speed, until light and fluffy.
  3. Change your speed to low and add your dry ingredients. Beat until all the ingredients are well combined. Dough should be nice and crumbly. Knead dough with your hands to fully combine.
  4. Cover and cool in the refrigerator for 15-20 minutes.
  5. Remove dough from refrigerator and knead with your hands until soft and pliable. Roll dough out to desired thickness. Cut with cookie cutter and place on baking sheet.
  6. Bake in a preheated oven for 8-10 minutes at 350 degrees. Cookies should be slightly brown around edges once done but won't change much in color otherwise.
  7. Leave cookies on the baking sheet for several minutes then transfer to wire rack to cool completely.
Cream Cheese Frosting
  1. Beat butter, cream cheese, and vanilla at medium speed until fluffy. Add powdered sugar and beat until smooth and creamy.
  2. Pipe frosting onto cookies.
  3. Pipe Byler's Relish House Strawberry Jam onto cookies, then swirl with a toothpick.
  4. Store in an airtight container for up to 2 days or in the refrigerator for up to 7 days.
