Macaroni Salad
Ingredients
- 1 lb cooked pasta
- 1 bell pepper, chopped
- 2 stalks celery, small diced
- 2 carrots, small diced
- ¼ cup green onions, small diced
- 1 cup plain yogurt
- 1 ½ cups Byler’s Last of the Garden
- ½ cup Byler’s Bread and Butter Pickle Relish
Optional:
- 4 hard boiled eggs
- 1 cup cooked corn / 1-2 cobs
- Salt and pepper to taste
- Garnish with green onions and fresh parsley
Directions
- While you chop your vegetables, bring a large pasta pot of water to a boil.
- Chop all your vegetables
- Add pasta to your boiling water, and cook 2-3 minutes short of package ingredients.
- In a large mixing bowl, whisk together mayonnaise, last of the garden, relish.
- Add vegetables and mix.
- Drain pasta and let it cool slightly.
- Drain pasta and let it cool slightly.
- Top with extra green onions and fresh parsley.
