Macaroni Salad

Ingredients
  • 1 lb cooked pasta
  • 1 bell pepper, chopped
  • 2 stalks celery, small diced
  • 2 carrots, small diced
  • ¼ cup green onions, small diced
  • 1 cup plain yogurt
  • 1 ½ cups Byler’s Last of the Garden
  • ½ cup Byler’s Bread and Butter Pickle Relish
  • Optional:

  • 4 hard boiled eggs
  • 1 cup cooked corn / 1-2 cobs
  • Salt and pepper to taste
  • Garnish with green onions and fresh parsley
Directions
  1. While you chop your vegetables, bring a large pasta pot of water to a boil.
  2. Chop all your vegetables
  3. Add pasta to your boiling water, and cook 2-3 minutes short of package ingredients.
  4. In a large mixing bowl, whisk together mayonnaise, last of the garden, relish.
  5. Add vegetables and mix.
  6. Drain pasta and let it cool slightly.
  7. Drain pasta and let it cool slightly.
  8. Top with extra green onions and fresh parsley.
